Recipe Time!!

This is a holiday favorite that I grew up with.  My Mom gave up on it this year and I took up the mantle. It's time consuming, as breads always are, but very tasty.

Kolache

1qt liquid (2c milk/2c water)
2 pkg yeast
3/4 C shortening
2/3 C white sugar
2 egg yolks
1 heaping tsp salt
dash nutmeg
about 9 C flour

Scald milk and water (120-130 degrees Fahrenheit) when warm, add yeast, sugar, shortening, egg yolks, salt and spice.  Stir well.

Start stirring in flour until it is too much to stir, then knead in the rest.  The dough will be a bit sticky but that's okay.  Let rise until double in bulk.  About 45 min.

Knead again and let rise on counter for another 45 minutes.

Divide dough into manageable pieces, roll out to 1/8" thick.  Cut into 3" squares (I used my pizza cutter, worked like a charm)  put a heaping teaspoon of filing*  in center, bring  opposite sides together, overlap and pinch closed

Place on lightly greased pans, spaced about 3/4" apart

Bake 375 for 15-20 minutes.  When done, remove from pans, place on tea towel and brush with melted butter.

The full recipe yields about 6 dozen.  I halved it successfully this year, although it took more than 4 1/2 cups of flour.  I just kept adding until the consistency was right.


*for the filling, we traditionally have used a prune filling.  Various jams have also been tried.  This year I used almond filling and it was tasty.  Check the baking aisle in your grocery store for the Solo brand products.

Flan

A hispanic co-worker of mine gave me this recipe when I told her I was going to make Flan for my brother's birthday. I had intended to do it the "classic" way, you know, double boilers, tempering eggs, the whole shebang. She laughed a bit and gave me this recipe her Aunt makes for family get togethers.

It's really tasty and stupid easy.

Flan

6 eggs
1 can sweetened condensed milk
1 can evaporated milk
2 cups sugar

In large bowl beat eggs, add canned milks and mix to combine.
In saucepan melt sugar until caramel brown, spread in bottom of 9x13 cake pan.
Pour flan mixture over the top.
Cover with foil.

Bake 325 20-30 minutes or until set. (keep an eye on it)

My mother always made these cookies at Christmastime...which is surprising, considering she was an athiest. Anyway, the only thing Christmassy about them is the name, and the look, sort of. This is from a recipe flier that was inside a bag of Sperry flour, probably from the 1950's. I still have it, Scotch taped together and yellowed.

JELLY SNOW TOPS
1/2 cup butter (you can use part shortening if you wish)
1/4 cup brown sugar(firmly packed)
1 egg yolk
1/4 tsp salt

Cream together until light and fluffy.
Add:
1 cup flour
1/2 cup nuts, very finely chopped

Mix together until thoroughly blended and a moderately stiff cookie dough is formed. Roll into balls, using about 1 Tablespoon dough for each cookie. Place 2 inches apart on ungreased cookie sheet. Using your fingertip, make a depression in each cookie and fill with 1/2 teaspoon firm jelly (apple or currant is good, but choose what you like).

Beat until stiff:
1 egg white
and gradually add
1/4 cup granulated sugar,

making a stiff meringue. Drop a spoonful over each cookie, making sure the meringue entirely covers the jelly (otherwise it will bubble over and run onto the pan and burn).

Bake in 300 over for 30 minutes, until cookies are just golden brown. Cool thoroughly (the jelly gets very hot inside).

This looks more complicated than it is and is kind of festive-looking.

The only other thing I remember we always had at Christmas was Waldorf Salad - who knows why? I guess my mother liked it. It still has Christmas associations for me.

3 shiny red crisp apples
3 or 4 celery stalks, leaves removed
1 cup walnuts (use the cheaper pieces - halves not necessary)
mayonnaise

Do not peel the apples; core them and dice into 1/2" pieces; coat with a little lemon juice, if necessary, to keep from browning. Slice the celery thin and add to apples along with walnuts. Mix in mayonnaise to coat. Refrigerate until serving time.

I now sometimes add a spoonful of horseradish (sounds weird but it's good) or some crumbled blue cheese. Waldorf salad will keep about one or two days.
